Kate’s Cranberry Spritzer

With the holidays quickly approaching it is time to begin all the planning that goes into making them perfect. From decorating, cooking and shopping … one of the first things I like to do is select a festive drink that is on hand & ready to offer family and friends. There are so many delicious recipes out there, but I tend to go with something that is refreshing, attractive, and of course tasty!

Cranberry spritzer.

This year when previewing cocktail recipes I couldn’t resist thus Cranberry Spritzer! From the festive red of the cranberries and green of the rosemary it looks like it’s right out of a Christmas catalog. The taste is amazing, so refreshing but also the perfect amount of sweetness due to the added sugar.

To make this cocktail you will need:
4 cups of fresh cranberries
1 cup of vodka
1/2 cup of white sugar
6 sprigs of rosemary (more for garnish)
8 ounce sparkling water
4 cups of ice

1. Place the cranberries in the pitcher of a blender along with two cups of water.  Blend on high until completely pureed with no large chunks remaining.  Refrigerate overnight to infuse.

2.Strain the liquid from the cranberry mixture, you should collect two cups of juice.

3.Meanwhile, place 1/2 cup sugar, 1/2 cup of water, and 6 sprigs of fresh rosemary in a small saucepan set over medium heat.  Bring to a boil, boil until sugar has dissolved. 

4.Turn off heat to cool, remove rosemary sprigs and discard.

Harvest season may have just ended, but the locally grown cranberries can be used in this year’s Thanksgiving cranberry sauce, or in your favorite festive drink.
